Ingredients
100ml coconut milk
2 tablespoon soy sauce
2.5 teaspoon yellow curry powder
1 teaspoon turmeric powder
4 cloves garlic, pasted
1 tablespoon freshly grated ginger
1 tablespoon fish sauce
1 tablespoon brown sugar
0.5 tablespoon sesame oil
2 pounds boneless, skinless chicken thighs
Peanut Sauce
4 tablespoon smooth peanut butter
1.5 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon brown sugar
1.5 teaspoon freshly grated ginger
1.5 teaspoon pasted garlic
1 green chilli
Instructions
Step 1
To prepare the peanut sauce, whisk together the peanut butter, soy sauce, lime juice, brown sugar, grated ginger, garlic, and green chili. Keep whisking until the mixture is smooth. (If the sauce is too thick, add a few tablespoons of water to achieve the desired consistency).
Step 2
Then, in a medium-sized bowl, combine the coconut milk, soy sauce, yellow curry powder, turmeric powder, garlic paste, grated ginger, fish sauce, brown sugar, and sesame oil to create a marinade.
Step 3
Chop the chicken thighs into 1-inch cubes and incorporate them into the marinade mixture. Ensure the chicken is thoroughly coated with the marinade, then transfer it to a Ziploc bag and refrigerate for at least 2 hours.
Step 4
Next, thread the chicken cubes onto the skewers, spacing them evenly apart. Be careful not to overcrowd the skewers, as this could cause them to break.
Step 5
Heat 4 teaspoons of sesame oil in a pan over medium heat. Place the skewers in the pan and cook, turning occasionally, until the chicken is thoroughly cooked.
Remove from heat and serve warm with the peanut sauce.
