About the Recipe

Buffalo wings are an American classic—crispy chicken wings tossed in a fiery hot sauce made with butter, cayenne, and vinegar.

First created in Buffalo, New York, they’ve become a game-day staple and party favourite, often served with cooling ranch or blue cheese dip and crunchy celery sticks. Whether baked, fried, or barbequed, they deliver the perfect balance of heat, crunch, and flavour in every bite.

Ingredients

  • 25 chicken wings (flats)

  • 4 tablespoons plain flour

  • 4 cloves garlic, chopped finely

  • 1 teaspoon black pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon olive oil

  • 5 tbsp buffalo sauce

  • Handful of spring onions, finely chopped

Instructions

Step 1


Set your oven to preheat at 200 degrees Celsius, or 180 degrees Celsius for fan-assisted ovens.


Step 2


Start by coating the chicken wings in the plain flour; this will help dry the wings and will allow them to crispen.

 

Step 3


Next spread evenly the wings onto a baking tray before placing in your preheated oven to cook for 5 minutes.


Step 4


Remove the wings from the oven and transfer to a bowl before adding chopped garlic, black pepper, salt, smoked paprika, olive oil and combine fully. Then place the wings back on the baking tray for a further 40 minutes cooking.


Step 5


Once the wings are cooked, add 2 tbsp buffalo sauce; combine the sauce and wings before placing on the bbq for a slight char.


Step 6


Take the wings off the bbq  and place in a bowl once there is a slight char and the wings are nice and crisp on the outside.

 

 Step 7


Add the remaining sauce to the batch and toss; this will ensure there is a nice saucy coating. To serve, place the wings on a plate and garnish with some chopped spring onions.
