Topped with a swirl of cream cheese or enjoyed plain, they offer a perfect balance of chocolatey richness and buttery sweetness. Ideal for special occasions or indulgent treats, these eye-catching squares are as stunning as they are delicious.

Ingredients
3/4 cup brown sugar
1/2 cup unsalted butter
1 large egg, whisked
Pinch of Salt
2 teaspoons vanilla extract
1 cup plain flour
1/4 teaspoon baking powder
100g white chocolate
2 teaspoons red food colouring
Instructions
Step 1
Preheat the oven to 195 degrees or for fan assisted ovens 175 degrees.
Step 2
Begin by creaming the softened butter and brown sugar; best way to do this is by using the back of a spoon, keep mixing until they are both combined.
Step 3
Next, add the whisked egg, pinch of salt and vanilla extract, before mixing once more until all the ingredients are well incorporated.
Step 4
Sift the flour into the mix along with the baking powder; fold the batter well. Add the red food colouring, giving it another fold until the mixture turns light red.
Step 5
Chop the 100g white chocolate and fold the chopped pieces into the batter; if you don’t like your brownies too sweet you don’t have to add the chocolate.
Step 6
Grease a square tin and line with baking paper, before adding the brownie batter; spread the mix as evenly as possible and place in the oven for 25 minutes cooking.
Step 7
Remove the brownies from the oven and whack the tray on the counter to create the cracked effect on the top of the brownie.
Step 8
Leave in the tin for 1 hr to allow the brownie to cook further.
Step 9
Remove the brownie from the tin and leave to cool completely on a wired rack; before cutting into equal sized pieces.
