Peanut Butter Oatmeal Cookie Bar

About the Recipe

These bars combine creamy peanut butter, hearty oats, and a touch of brown sugar for a chewy, satisfying treat. Packed with protein and fibre, they’re perfect for snacking, lunchboxes, or a cosy dessert—sweet, nutty, and irresistibly soft.

Ingredients

  • 130g rolled oats

  • 30g wheat flour

  • 1 teaspoon bicarbonate of soda

  • 1 teaspoon cinnamon

  • 70g chopped almonds

  • 2 large eggs

  • 130g creamy peanut butter

  • 65g maple syrup/golden syrup

  • 1 teaspoon vanilla extract

  • 100g dark chocolate

  • 1 bag of salted caramel M&Ms

  • Pinch of salt

Instructions

Step 1


Set your oven to 190 degrees Celsius, or 170 degrees Celsius if using a fan-assisted oven.


Step 2


In a large mixing bowl, place the rolled oats, wheat flour, bicarbonate of soda, cinnamon, salt and chopped almonds; combine well and set aside.


Step 3


In another bowl, whisk together the eggs, creamy peanut butter, maple syrup/golden syrup and vanilla extract.


Step 4


Next, combine the wet and dry mixtures and mix well with a wooden spoon until fully submerged.


Step 5


Spoon the fully combined mix into a square tin, ensuring to flatten it out fully; bake in your preheated oven for 10 minutes, allowing the cookie dough to cook slightly, but not completely.


Step 6


Whilst the cookie dough is in the oven, pot boil some water before placing a cooking bowl on top; place the chocolate in the bowl and allow to melt fully.


Step 7


Take the cookie dough out the oven and cover with the melted chocolate; while the chocolate is still hot, scatter the M&Ms over and then place in dish in the fridge for 2hrs.


Step 8


Finish off by removing the slab from the tin and cutting the block into equal size bars according to your choosing.
